Arugula, Chicken, and Walnut Couscous |
A quick and delicious, fresh, one-pot meal. This is my favorite 'go-to' meal on a busy night. It's full of flavor and really healthy.
Ingredients :
- 1 teaspoon olive oil
- ¼ cup chopped walnuts
- 1 teaspoon olive oil
- ½ pound shiitake mushrooms, sliced
- 1 teaspoon olive oil
- ½ pound skinless, boneless chicken breast halves, cubed
- 3 cloves garlic, thinly sliced
- 1 ¼ cups fat-free chicken broth
- 3 cups ( lightly packed) baby arugula, very coarsely chopped
- 1 (5.9 ounce) package Parmesan-flavored couscous
- ¼ cup chopped fresh basil
